BEEF TENDERLOIN

Rub all over with seasonings (packaged au jus mix is great)

Place tenderloin in hot 500° oven for about 8-10 minutes

Open oven door, and look at it

Lower oven to 350° and continue cooking for 10-15 minutes

This will result in a wonderfully rare and flavorful tenderloin

STANDING RIB ROAST

(directions are for a 5 lb or roughly a 3 rib roast adjust accordingly)

Allow roast to stand at room temperature for an hour

Preheat oven to 375°

Season roast

Place roast on rack with rib side down and fatty side up

Roast for 1 hour, then turn off oven

Leave roast in oven for 3 more hours

About 30 minutes prior to serving, turn oven to 375° and reheat

Do not open oven door or remove roast at any time from start to finish
